A sultana raisin is made from the same grape as traditional raisins. While raisins are dried traditionally, sultanas are dipped into vegetable oil and an acidic formula and then dried. In this lemon-sultana marmalata, the flavors of lemon and sweetness from the sultanas are paired with the savory, sharp flavor of caraway and saffron.
