Black cardamom–a cousin to yellow and green cardamom–is a popular spice used throughout South and Central Asia and is particularly popular in Indian cuisine. The pods are pink and purple when fresh and turn black as they're smoked over an open fire. After being smoked, the cardamom is then ground for easy use in any dish you can imagine.

Smoked black cardamom is not quite as sweet as its yellow and green cousins. The flavor is quite bold and pungent. It works well in slow-cooked stews and soups and pairs very well with citrus. Want the bold, smoky flavor to shine through? Try whisking a pinch into dips or dressings.
