Carnaroli is called the king of risotto because it maintains its shape well and produces the creamiest risotto. This carnaroli is smoked with cherry wood for 14 hours, giving it an intense aroma but delicate smoked flavor. Your risotto will take on an even more complex flavor profile provided by the smoky undertones. It pairs perfectly with wild mushrooms or with seafood, like shrimp or scallops.

This rice is minimally processed, retaining part of the proteins and vitamins on the surface. This is impossible with industrial processing methods, which cannot guarantee the prevention of chemicals accumulating on the shells.

It's sourced from the Vercelli region of northern Italy. The producer, gliAironi, has been committed to improving the farming conditions of this region for the past five generations.
